Ulundu vadai

Type: Savoury

Preparation Time: 10-15 minutes

Servings: 14 vadais

Ingredients

  • 1/2 cup split black gram
  • 1/2 tsp salt
  • 1 chilli
  • oil

Instructions

  1. Wash and soak the black gram for around 2 hours.
  2. Grind it dry in the mixer with salt and chilli. Add as little water as possible.
  3. Heat the oil in a pan.
  4. Pat a small lemon-sized ball on a banana leaf and put a hole in the middle.
  5. Drop into the oil gently. Repeat till the oil is filled up
  6. Flip it so that both sides are evenly cooked till they are golden brown.
  7. Place it in the strainer so that the oil drains off.
  8. Serve it hot.

Notes

  • This is served with coconut chutney and sambar
  • The consistency of the batter is very important. It should be as thick as possible.
  • You can add more chillies while grinding if you like it spicy.
  • Curry leaves can be torn and added to the batter after grinding.
  • If you do not have a banana leaf, you can use a steel plate (the back side of the plate). Grease it with oil before putting the batter on it.
