Ingredients
- 1 cup raw rice
- 2 cups water
- 1 tsp salt
For tempering:
- 2 tsps Ghee
- 1 tsp mustard
- 1/2 tsp cumin
- 1/4 tsp peppercorns
- 1/2 tsp pepper powder
- pinch of asafoetida
- 2 sprigs curry leaves
Instructions
- Put the raw rice in a vessel.
- Wash it at least twice
- Add the water and salt
- Cook it in the pressure cooker – 3 whistles is more than adequate
- Once the pressure is released, take out the rice and spread it on a plate to cool.
- Take a pan and add all the tempering items
- Once the mustard and cumin sputter, add the cooled rice into this.
- Stir well and remove from flame.
- Serve hot.
Notes
- There is another method which can be used when in a hurry – Use the pressure cooker vessel itself like a pan. Tempering items to be put in and then once the mustard starts sputtering, add the washed rice without water. Saute it well. Add water and close the lid. 3 whistles and the cumin pepper rice is ready.
- If you like it more spicy, you can add red chillies while tempering
- Spices such as cinnamon,bay leaf etc. may also be added while tempering
